Mulberry Baked Custard

This is a really decadent dessert, but so yummy. I also love to make it with a rhubarb base. This recipe makes enough for six serves. It is really rich, so I only use small dishes

Ingredients:

●  3 cups mulberries (add ¼ teaspoon sugar if you like sweet fruit)
●  4 egg yolks
●  2 whole eggs
●  2 ½ cups cream
●  2/3 cup caster sugar
●  2 teaspoons vanilla extract

Method:

Half fill small (single serve) over proof dishes with mulberries (1/2 cup each and adding ¼ teaspoon sugar or honey if you like sweet fruit).

Beat together all the other ingredients. Divide this custard mix between the six dishes, pouring it gently over the fruit.

Bake in a moderate oven for around 30 minutes or until the custard is set. Allow to cool slightly before serving.
